Makes 2 cups
2 eggs, beaten 1/2 cup honey 2 tsp grated lemon rind 2 TB frozen orange juice concentrate 1/8 tsp salt 1/4 cup lemon juice 2/3 cup sour cream 1/4 tsp fresh mint leaves, chopped
In a medium saucepan, cook eggs, honey, lemon juice, orange juice, and salt over low heat until thickened. Cool. Fold in sour cream, lemon rind, and mint leaves. Serve on fresh fruit salad. |
